National Egg Day: Our Favorite Day of the Year!

When we heard that June 3rd was national egg day, we knew we had to share some of our favorite ways to prepare eggs! Here at TC Eggington’s, our robust menu offers a wide array of egg dishes, as well and several creative and mouth-watering options for both breakfast and lunch.

Why We Love Eggs

Not only are eggs delicious, but they are also packed with nutrients. They contain unsaturated fats, which are great for your heart, and the “good” kind of cholesterol. Eggs are also high in protein and are a great source of Omega 3s. Some studies have shown that having an egg a day lowered your risk of heart disease and stroke! The best part about eggs is that there all sorts of ways they can be prepared. How do you like your eggs?

Eggs Benedict

A traditional Eggs Benedict typically requires poached eggs, hollandaise sauce, ham or Canadian bacon, English muffins, and a little salt and pepper. Our customer-favorite, Farmer’s Market Ben E. Dict, includes fresh organic spinach, sliced tomatoes, avocado, and our delicious hollandaise, all piled atop a toasted English muffin.

Basted Eggs

A basted egg is one of our favorites. It is a cross between a poached egg and one served sunny side up. The egg is fried on the bottom, steamed on the top, and flavorful all around. A few of our favorite breakfast dishes containing basted eggs include the Santa Fe Sautee, the Hilltop Acres, and the Croque Monsieur.

Poached Eggs

A poached egg is steamed, cooking the outside while leaving a runny yolk. It is a delicate way of cooking, resulting in flavorful eggs used in many traditional breakfasts. In addition to our mouth-watering Eggs Benedict, we also serve poached eggs with our Crab Stuffed Pastry. Our freshly-made pastry shells are stuffed with artichoke hearts and crab meat, topped with poached eggs and hollandaise sauce.


Frittatas are similar to an unfolded omelet or crustless quiche. They traditionally contain cheese, vegetables, meats, or all of the above. Our frittatas are served open-faced in a hot skillet. We offer three ways to enjoy this delicious dish: The Vegetable Gardina, the Red Hot Mama, and the Cap’s Estranno. Whether you are looking for a vegetarian option, a traditional option, or a frittata stuffed with sausage and jalapenos, we have the dish for you!


Omelets are a breakfast staple and can be prepared with a variety of ingredients. Here’s at TC Eggington’s, we offer 10+ omelets packed with everything from fresh zucchini to grilled chicken. The Spicy Spain omelet contains cheese, onions, and green chilies and is a popular vegetarian option. On the flip side, Piglet’s Passion contains diced ham, pork sausage, bacon, green peppers, olives, tomatoes, mushrooms, zucchini, and many assorted kinds of cheese. Of course, we offer simple and traditional omelets as well.
