It’s that time of year again here in Mesa, AZ! As the days get warmer, longer, and dryer, it’s important to stay hydrated and to stay cool. For many of us, that means less beef stew and more summer salads. Here are a few of our favorite ways to stay cool here at T.C. Eggington’s when the weather’s hot!
Keeping it Cool at Breakfast
While our spiced oatmeal may be a healthy way to start your morning, it’s good to have other options for a hot summer day. Fruit, granola, yogurt, or a muffin paired with a fresh-pressed juice or iced coffee is a delicious way to go. Berries and melon are great choices to help keep you cool. Our Breakfast Salad contains assorted fruits, yogurt, and granola, layered together in perfect parfait fashion. Keeping it Cool for Lunch
When the temperatures climb into the triple digits, a mid-day lunch may be the last thing on your mind. However, keeping your body fueled up is exactly what you need to do so you don’t become tired and sluggish. A salad, light proteins, and fresh fruits are great ways to fill up. Avocados, coconuts, and other water-based foods will help you stay hydrated and cool. At T.C. Eggington’s, we offer all sorts of lunch dishes that are perfect for a summer day.
You can choose from any one of our many salads, including our popular Grilled Shrimp ‘n Citrus Salad. This salad contains delicately grilled Gulf shrimp, avocado, bacon, goat cheese, and grapefruit, all served over baby greens. Another favorite is our Tuna Apple-Walnut Salad which is served over honeydew or fresh greens.
